Two Minute Soup
Lots of holiday parties and lots of sweets at work had me wanting something light for lunch today. To make this soup I cooked some spinach in chicken broth for two minutes and then drizzled a little olive oil on top. It was a perfect simple light lunch for someone whose been eating too much holiday food lately.
